I am Hamed, from the University of Amsterdam, working on an ethnographic study about tourist experiences in the city of Amsterdam. Could you tell me about yourself?
I am Peter, from Amsterdam, chief at this restaurant (chandler’s warship).

I take full responsibility about the menu and he helps me in preparing the ingredients, placing food on plates and cleaning kitchen staff. Waiters work on serving the customers. Unlike other restaurants, we don’t have people tell us what to do what not. Everybody checks the menu we serve for dinner and work on making things in order.
Me: why don’t you tell me about the specialties you usually prepare?
Peter: well! It depends on what customers order. We have got three menus for each season and customers order the menu they want to have for a particular night. So, I prepare the menu they requested. For example, As you may see it on the board behind you, tonight we will are ready serve the third menu. Me: would you describe the sort of people dine at your restaurant?
Peter: we have various kinds of tourists coming from different parts of the world. Most of them are from Italy, France, German and US. We serve local customers as well. Most of the customers come to eat at our restaurant are the wealthy family members. For example, banks workers, big business men and company

They are always wanted to stay calm. You can even hear their voice. They don’t even want music. They prefer to discuss about private issues while eating and drinking. From the time they start eating till the time they leave you don’t see them interacting with the workers in here. Yeah! You have time, you can stay a bit longer and watch their behaviors yourself.

Me: for what main reasons do this group of tourists prefer this restaurant to other restaurants? In other words, why this restaurant is the destination place of tourists?
Dave: because my cuisine is delicious (laughs). I am kidding you! This could be due to many reasons. The restaurant is suitable for the tourists to organize meetings and discuss important issues. Also, it gives them a freedom to openly share their ideas among their group without being disturbed. They can have private room in other restaurants but it could not be quite and full of service like in here.
Me: I have observed e old staff such as wooden tables, silver statues and artifacts in every corner of the restaurant. Do you think this is one of the reason for the tourists to love the place?
