The Gullah Geechee culture is derived from the first Africans that were enslaved and brought to the United States who settled in coastal areas of South Carolina down to Florida. The Gullah Geechee has its own language, dialect, traditions, and cuisine which has heavily influenced what is considered Southern food. Rice is a primary component in many of their dishes, because rice cultivation was brought to the states by the slaves from West Africa. One of the most well known dishes is “Gullah Red Rice” which consists of long grain rice, sausage, olive oil, onions, tomatoes, chili powder, and salt. To prepare the dish, heat olive oil in a pot and cook the sausage in it until it is browned, then remove from the pot and set aside. In the same pot add the onions and tomatoes and saute them then stir in the water, rice, salt, and chili powder then finally add the sausage and cover and cook for twenty minutes. …show more content…

The stew included potatoes, corn, smoked sausage, shrimp, beer, old bay, tabasco, and water. In a large pot pour the water and beer in and mix in the Old Bay and Tobasco, then add the potatoes and let the mix simmer for fifteen minutes. Next add the corn and sausage and cook for five minutes, then add the shrimp and let that cook for five more minutes. Finally, drain the water and it is ready to be served.
