The issue of human rights appears when Mattie and Taylor were watching a television program about the United Nations not helping the Guatemalans and Salvadorans who were denied U.S. citizenship. Kingsolver uses this event to inform the audience that in certain situations, there will be injustices for humans. Everyone won't get what they desire.
