1. I would not necessarily think they would have similar health profiles at this point in their lives. Even though they are twins and have the same genetic makeup, they live in completely different social environments, and this can play a large role in health. The fact that Jared works long hours and had has more stress in his life could be significantly attributing to his poor health profile. Stress has been linked to behaviors that lead to obesity and type 2 diabetes.1
2. Since Jared is obese and has type 2 diabetes, I would expect that he was consuming a diet rich in foods such as refined sugar and flour, which include foods such as soda, potato chips, potatoes, and processed meats. These foods have a high glycemic index and can attribute to weight gain and type 2 diabetes. Matthew is fit and lean, so he is possibly eating an array of healthful foods such as nuts, non-starchy vegetables, fruits, yogurt, and whole grains with a limited amount of added sugar. These foods have a low glycemic index and are part of healthy diet for weight maintenance.2

I believe that Matthew and Jared have different genetic susceptibilities. They have the same genes, but there are environmental factors which can alter these genes.
