These are considered the slow movers.
The store clerk check everything that the deli staff put in the trolley during the non-peak hour, usually soon to be expired products, and calculate accordingly their shelve life which is then place aside from similar product that had longer shelve life.
The cold storage room is near the perishable goods like meat, seafood and vegetables. It is convenient for the perishable good to reach their cold shelves within the shortest time.
The Deli staff prepares the meat in the open. For example, a chosen leg of ham are sliced by the slicing machine and then packed in a plastic with food protector paper, which is then weigh to confirm the amount and determined the price
