The purpose of our lab experiment was to determine whether red cabbage juice would be an acceptable indicator of pH or not. We believe that “Cabbage juice is a good indicator of PH balance.” We used litmus paper pH test strips as a baseline in which to compare the validity of the cabbage juice results. The pH scale is a measure of the Hydrogen ion concentration in water. PH stands for 'potential of Hydrogen'. This scale was invented in 1909 by the Danish biochemist S. P. Sorensen (need citation please) A pH value is represented by a number from 1 to 14, with 7 being the middle (neutral) point. A pH of less than 7 indicates acidity, while a pH result above 7 indicates alkalinity.

Now place seven drops of cabbage juice into the test tube labeled HCl, four drops of cabbage juice into the test tube labeled HCl, and examine the color change. Noting the difference in pH with cabbage juice as the indicator, determine your hypothesis. The second part of the experiment is testing 5 unknown substances against litmus paper and cabbage juice. Begin the second portion by placing seven drops of cabbage juice in the test tube labeled one. Put seven drops of unknown one to the tube and slightly mix. Observing the color, use the pH scale provided to tell what the pH is according to the cabbage. Record this information. Slightly tip the test-tube, using the litmus paper determine the true ph.
