Introduction
Salmonella food poisoning, caused by a bacteria salmonella which is a gram negative, non-spore forming bacillus. In the United States, salmonella is the second most common source of food poisoning. This infection is obtained through poultry products including raw eggs and meat. It can be transmitted to people through the consumption of contaminated food and it can lead to serious condition as several adverse health effects are related to this food poisoning. In July, chicken products that were produced by Aspen Foods was traced to be the source of an outbreak of salmonella and was determine by the U.S. Department of Agriculture’s Food Safety and Inspection Service. Starting in May of the said year, there were 5 patients who experienced some symptoms of salmonella poisoning and during the FSIS’ inspection they determined that these symptoms experienced by the patients were result of salmonella poisoning. During the recall, approximately 2 million pounds of chicken released in the market were recollected. During this outbreak, there are only small number of cases of salmonellosis. But every year, many people are affected by this foodborne illness. People with weakened immune system, children and elderly are the ones who are more susceptible to this infection; children have the highest risk, but kids who are under 5 years of age have higher rates of salmonella infection compared to any other age group. Some strains of this bacteria live harmlessly in the intestinal tract of animals and birds; they can be spread to humans through fecal-oral route. A common problem in poultry products, especially eggs, is that chicken feces may contain salmonella which can contaminate the eggs through the cracks outside of the shell. This makes eggs to be the most common food source related to Salmonella entiritidis. Also, broiler chickens which are chickens that are raised for meat can be contaminated with this
