Thanksgiving. The mere mention of the word conjurs up a feeling of warmth, love, and satisfaction for me. It is a holiday to reflect and share on abundance, gratitude, family, friends, food, and wine. No presents to buy (unless you want to have a treat at each place setting), fresh local, well prepared food; friends and family from near and far.
Most of us have tried and true recipes that we make year after year and that are demanded by our guests. This year see if you can source most of your ingredients locally. What a perfect opportunity to support our local farmers and food artisans.

Try the cellar stairs or a cool porch or shed. There are many different variaties of squash you may not have tried. Cut up pieces of the flesh can be stored in the refrigerator but don’t refrigerate whole squash as the humidity is not good for them. Cooked squash can be frozen. I like to keep purees on hand to make soups, add to casseroles, and make desserts like pumpkin bars and pies. Usually baked with a mixture of brown sugar and butter which is not bad at all. For a change of pace brush the cut halves with olive oil, then fill with minced garlic and fresh ground black pepper.
Autumn Cup Squash is a hybrid buttercup/kabocha type dark green squash with rich flavored flesh. It has yellow –orange flesh that is string less and sweet.
Banana Squash is shaped like a banana and grows up to two feet in length. Its bright orange finely textured flesh is sweet.
Butternut Squash is beige colored and shaped like a vase or a bell. It tastes similar to sweet potatoes. Excellent in creamy soups.
Buttercup Squash are part of the Turban squash gamily (hard shelled squash with turban-like shapes). These have a sweet and creamy orange flesh and are much sweeter than other varieties.
Carnival Squash are cream colored with orange spots or pale green with dark green spots in vertical stripes. The delicious yellow meat is reminiscent of sweet potatoes and butternut squash.
