He eventually ended up back on American soil where he would build the foundation of what his career is today. From the start of his career in 1974 to today he's never stopped learning even though he's reached such great heights in his culinary career. His philosophy, finesse, and the duration of his proven career are some of the key reasons today's future chefs and current working chefs pay so much attention to what Thomas Keller says and does.
His cooking style is primarily French but, he used his style that he learned under his mentor Chef Roland Henin to elevate and innovate a new style of American cooking. It was based in a old building that actually used to be an old steam laundry shop, and that's where it gets its name. The food is at its core French, but it has distinctive American influences. From 1994 until this day it has always been regarded as one of the best restaurants in the world and the quality or service hasn't slipped one bit.
He is known to have certain views or philosophies on different things in the culinary world. One of his most famous philosophies is his law of diminishing returns in the kitchen. Each dish that he creates he wants the first initial bites to be packed with flavor and excitement, but just enough to give great taste, without becoming stale by having too much on the plate. It's his view of the law of diminishing returns that leaves his customers salivating over the next bite of his creative food.
