As for the dumpling skin, it is made out of flour, sometimes potato and even bread. However, the skin that we use for my family’s home made dumplings is made primarily of flour. The original method to make the dumpling skin is to combine two cups of flour with salt and lukewarm water in a large mixing bowl. One must mix the dough thoroughly until it becomes a big lump. Then knead the lump until it is soft. After that, we are to let it sit in a bag until it cools. We then take the dough out and pull it out into small pieces. Next, we use a rolling pin to flatten each small piece and just use a circle cookie cutter to form the wrap. To prevent the finished wraps from sticking to one another, an additional cornstarch layer is applied on both sides of the sheet. However, the process is tedious and time-consuming so my family prefers to buy the package dumplings wraps. We usually buy four packs that are roughly around sixteen ounces each and it is inexpensive. It lives up to the definition I have set for myself. This recipe created within the household was passed down from my grandmother to my mother and now to my siblings and me. This recipe may continue to be passed on to me and may be revised and changed into a better recipe as my mother has done. The measurements, contents may be slightly different but the basic ingredients will remain the same, therefore making it authentic to our household.
