Ecuador is a fairly small country located in northwestern South America, but has an improbable variety of landscape and culture. From the warm, white sand beaches to the tropical, green rainforests, the country is equally generous and appealing to everyone. Adventurous locals and travelers are always kept occupied and entertained with all of the many exciting activities that the country has to offer. In a matter of only 2,000 miles, there are tons of adventures waiting to be experienced.

Typical Ecuadorian meals in the highland region are often based around avocados, cheese, potatoes, and sweet corn. Llapingachos are a very common fried patty made of mashed potatoes and cheese, often served with a fried egg, avocado, beetroot, and occasionally pork or sausage as well. Many roadside restaurants serve whole spit roast or oven roast pigs and fritada, chunks of deep fried pork, which often includes a mote and a tomato and onion salad on the side. Often reserved for special occasions, guinea pig, “cuy”, is an extremely popular dish, but is rather expensive. In Ecuador’s coastal region, coconuts, plantains, rice, and yucas are common ingredients used in dishes. There are also large supplies of tropical fruits including papaya, pineapple, starfruit, and many others which are eaten raw or used in fresh juices.
